Wyoming may not be a state that evokes thoughts of bourbon, but Wyoming Whiskey has affirmed the state’s place on the bourbon distilling map. Utilizing local grain grown in Kirby, limestone water from the Madison Formation, and five years of on-site aging in the state’s sporadic climate, this is the most authentically “Wyoming” bourbon the state can produce. The following three are standout whiskeys in the brand’s catalog.
Small Batch Bourbon
Small Batch is Wyoming Whiskey’s flagship expression, engineered to ensure complexity and roundedness. This bourbon hits every note and is an incredibly budget-friendly pour at under $50 USD. Classic bourbon aromas of vanilla and caramel lead to flavor notes of brown butter, baking spice, and a hint of florality. This bourbon carries a thinner body, but it holds a great balance at 88 proof, which allows every note to come through thoroughly. The finish is light and crisp and offers warm cinnamon spice notes. All in all, it’s a wonderfully traditional, easy-sipping bourbon that checks every box.
Double Cask
The Double Cask bottling is aged the same as the signature small batch: five years in newly charred oak, but is then followed by finishing in Pedro Ximenez sherry-seasoned casks. The extra layer of depth added by the sherry accent elevates this bourbon. Aromas and flavor notes of vibrant fruit and dry spice brighten and expand the traditional caramel, vanilla, and oak character. The bump in proof to 100 lends more depth and body, encouraging the rich spice notes with slightly more heat. Wyoming’s Double Cask bottling does come with an increase in price to $70 USD, but it’s well worth the difference.
Single Barrel
Single-barrel bourbons are inherently special. Each barrel produces a finite number of bottles, the contents of which are the product of the specific conditions of its lifespan. While each batch of Wyoming Whiskey’s single-barrel bottling is slightly different than the next, this one (Barrel #850) offers a full-body bursting with indulgent aromas of dark fruit and chocolate. Notes of raisins, currants, and more dark chocolate lead to a finish bright with orange peel and warm spice notes, all carried by a lush, creamy profile. Its richness comes with a larger price tag (about $100 USD), and I believe it is deserved.
Final Thoughts
Of the three, my personal favorite is the Single Barrel. Its unique nature guarantees a unique pour, and when you consider the Wyoming-specific ingredients and climate, it makes this whiskey that much more enjoyable. Still, the Double Cask provides that extra layer of depth thanks to its sherry-cask finish, and the flagship Small Batch is as functional a bourbon as you can find.
