Its founder, Mexican-born Diego de la Vega Hernandez, is well aware of the current “Mexican Renaissance,” which is expanding into every facet of Mexican culture. While his academic and career experience led him elsewhere, Hernandez’s love for his homeland never dwindled, leading him to kickstart the mezcal brand in 2020. From the beginning, his goal was to capture the authenticity of Mexican heritage and craft.

The central theme of Zomoz Mezcal’s dedication to the rich tradition of mezcal making is its commitment to the artisanal process run by Isabel Santiago, a fourth-generation Maestra Mezcalera. Made in the Zapotec region of Oaxaca, it uses only organic espadin agave and spring water in its production. The agave is cooked underground, crushed by a traditional tahona (a traditional stone wheel used to crush agave), then fermented and distilled in copper stills before being filtered and bottled at 40% ABV.

Tasting Notes

Although its appearance is crystal clear, a pour of Zomoz is an alluring experience. Made from 100% organic espadin agave and bottled at a standard ABV, it’s a classic makeup that delivers flavor without unnecessary frills. It’s straightforward, to the point, and delicious.

On the nose are aromas of bright agave, honey, and some floral notes built on a robust and smoky foundation. The fresh espadin is notable on the palate, accompanied and complimented by sweet notes of tropical fruit and vanilla. Behind these are notes of sharp citrus and earthy grass. I love finding sturdy, earthy notes in a mezcal; this version is no exception. It also offers a slight brine that captures added elements of authenticity and ruggedness.

The finish is silky smooth, and its standard 40% ABV is equally approachable and enjoyable, allowing its many subtitles to shine. Roasted agave smoke remains throughout, concluding with a crisp and vibrant ending.

I love everything about this mezcal. Where it comes from, who it’s made by, its contents, and the craft behind it. Zomoz is easily sippable neat, or in any cocktail you might desire. Even as more agave spirits hit the market, Zomoz is an elevated expression that is tried and true in every aspect.
